Quarantine Dinner Ideas :: Taco Tuesday
Back by popular demand (ha!), and in preparation for Cinco De Mayo, here is a brand new collection of favorites. Taco Tuesday is totally a thing here in our house. It’s one meal I know everyone will gobble and I can change it up easily each week. When asking for favorites I definitely got a bunch from this category so I thought I might group them all together. Keep the recipes coming! I’m looking for crockpot meals next. I have a love hate relationship with my crockpot. When it’s good, it’s amazing. When it’s not good, it’s just mushy. Help!
Taco Salad Casserole - A first for us!
This week I didn’t have any wraps in the house but we had about 6 avocados {thank you Costco} and we all felt like Mexican. I absolutely LOVE Pinterest when I’m looking for dinner ideas. I like to use it like a Google search. I type in the ingredients we have in the house and see what pops up. It works every time! This dish worked out perfectly and my crew gobbled up every last bite. We are big salad people in this house so serving this over a bed of romaine lettuce was a perfect way to freshen everything up a bit.
Brooke’s Enchiladas
My niece has loved to cook since she was a little girl. My Julia is following in footsteps. Every time Brooke comes to visit us she and Mike plan dinner. They decide what they are going to make, they go to the grocery store together and time after time it’s a smashing success. The last time she was with us she used her Mother’s recipe suggestion and made these DELICIOUS enchiladas for us. I’ve used this recipe a few times. Typically I leave the sauce out of a few of them in case one of my littles isn’t into the sauce and cover just half as the recipe calls for. I love this because you can use a rotisserie chicken for the filling AND make them up earlier in the day (or even the day before). Popping dinner into the oven with no prep that night is like a dream to me! It’s so nice to end the day with dinner cooking but none of the dishes to be cleaned.
Carolyn’s Mexican Street Corn
I have to giggle that my friend Carolyn is sending me recipes. This is coming from a girl who does not {typically} cook. NOT ANYMORE! She’s cooking up a storm and loving every minute of it. This is a delicious side dish that can go inside a wrap or just on the side with some grilled chicken. I prefer when Mexican food has a freshness to it so this is right up my alley. I also agree with the suggestion to go for the Cotija cheese if you can get your hands on it. Incorporating Cotija has been a game changer for us!
Natalie’s Sweet Potato Chicken Chili
My girl Natalie is one of my favorite resources for family friendly and healthy dinners. They are always minimal ingredients with over the top flavor. She also always gets creative with recipes and I feel like she’s an advocate for taking the recipe as a suggestion. My kinda cook!
Perfect Mustgo Meal Sheet Pan Nachos
My friend Mark introduced us to the Mustgo meal. In other words, “Everything MUST GO.” This typically happens at the end of the week but nowadays it can happen just about any day of the week. Sheet Pan Nachos have proven to be a perfect Sunday afternoon snack or even a dinner. The crunch of the tortilla chips plus all the leftovers in the fridge is a great way to try something fun for everyone to dig into. This recipe is just a suggestion. Incorporating any leftovers onto the nachos can be a great way to change it up a little!
I’m not sure what it was about last week but it was my toughest yet. I can’t even pin point what was so different except that it just felt like more of the same. I have noticed that meal times have become moments in the day I look forward to. Everyone is together, we’re blessed to have food on our table and to all be healthy. Honoring these moments feels good to me and I wish the same for you and your family.
Last week I completely forgot to link my PINTEREST RECIPE board for you guys on the last post. This is where I keep my favorites. Some I have tried and others I plan to and what better time than now.
